This particular type of pasta is produced with hard wheat and selected fresh eggs. It is home-made, and therefore it does not undergo thermal variations. It is the final processing that makes good pasta, and therefore it is particularly important in the process: the pasta is dried for 70-80 hours at a temperature of 25-35°C.
